Chunky Vodka- mushroom pasta sauce

We had family over and pasta is something everyone loves. We looked up a bunch of sauces on the internet and finally decided on a Vodka- mushroom sauce. A thick chunky sauce for a hearty pasta meal.

(serves2) You need:

10 mushrooms chopped
2 large tomatoes finely chopped (or any ready made chunky tomato pasta sauce)
50 ml vodka
4-5 tbps fresh cream
1 onion finely chopped
3-4 cloves of garlic chopped
olive oil
sprigs of rosemary
oregano (1 tsp)
grated Parmesan for garnish

Fry the onions and garlic till golden. Add the vodka and wait for 2-3 minutes till it evaporates. Toss in the chopped tomatoes, and simmer for about 5 minutes. Add the fresh cream and oregano and salt. Simmer till it's thick and creamy. Sprinkle some rosemary. Such tiny leaves but so fragrant, rosemary really add a punch to the flavor.

A fresh Greek salad goes well with the pasta.
