Crispy potato ribbons

Super quick snack, from Dona Hays Fast Fresh and Simple show on tv. You can use potatoes or sweet potatoes for this. Peel the potatoes very thin like a ribbon- it would help if you had large size potatoes. In a large bowl mix the potatoes with a tbsp of butter, a pinch of salt, lots of thyme and freshly grated parmesan.


Lay them like tiny flat bundles on a baking tray. Pop them into the oven for about 15-20 minutes till they turn crisp and golden.
(Use a baking sheet to avoid the potato sticking to the tray)
